Abstract

This study analyzed sugars in 67 varieties of seeds and mushrooms to generate reliable data for the Korean Food Composition Table (KFCT). High performance liquid chromatography-evaporative light scattering detector (HPLC-ELSD) was utilized as a sensitive and selective method, offering superior resolution compared with conventional approaches. Six sugars were evaluated, including fructose, glucose, sucrose, lactose, maltose, and galactose. The coefficients of determination ( R 2 ) for calibration curves of all sugars were above 0.9995, with detection limits ranging from 5.34 to 37.50 mg/L and quantitation limits from 17.79 to 125.00 mg/L. Accuracy was validated using Standard Reference Material (SRM) 3233, showing recoveries ranging from 82.92% to 104.57% and repeatability between 0.27% and 1.80%. Among the analyzed samples, fructose, galactose, glucose, sucrose, and maltose were commonly detected. However, lactose was not detected in any samples.
