Investigating the antimicrobial effects of sodium benzoate, sodium nitrite and potassium sorbate and their synergistic action on selected food- spoiling bacteria and fungi found Escherichia coli manifested the greatest sensitivity to the combined action of preservatives, Aspergillus flavus the greatest resistance.
