Abstract
The principle and measuring method of Tristimulus colorimeter was introduced.About 30 principal cultured wheat varieties of China were determined with this instrument,and the data range of L *?a *?b * of Chinese wheats were made sure.The relationship between flour color and the data of L *?a *?b * was discussed,and pointed out that true judgment should work out only by colligating the three index of L *?a *?b *.
